Might just be the best snack you've EVER had

I just HAD to share this recipe with you. I made it the other day at home, to keep in my fridge for when I need a delicious yet healthy snack, and I was really amazed at how yummy it was. I think you will be too. It actually tasted like I was eating something riddled with oil and sugar and all kinds of not-so-healthy ingredients. Except I wasn’t!

Take a look at the ingredients and you will see nothing that is unhealthy. If you’re skeptical about the health value of chocolate chips, either skip them altogether, or seek out a super dark healthy variety. You can also make your own healthy chocolate chips – see a recipe for them here.

These really are the perfect snack, especially if you have a lunchtime or 5 pm Corporate Yoga class at your workplace. Eat one 1.5-2 hours before your class starts, and you will not feel hungry. (Remember to stop eating though, at least 1.5 hours before yoga class.)

These delicious bars are high in both fibre and protein, and the chocolate topping will make them feel like a decadent treat.

Chocolate Topped Power Bars
2 cups almonds (raw)

½ cup unsweetened shredded coconut
½ cup unsalted almond butter

4 drops stevia

  1. Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor
  2. Pulse briefly, about 10 seconds
  3. In a small sauce pan, melt coconut oil over very low heat
  4. Remove coconut oil from stove, stir stevia, agave and vanilla into oil
  5. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste
  6. Press mixture into an 8 x 8 glass baking dish
  7. Chill in refrigerator for 1 hour, until mixture hardens
  8. In a small saucepan, melt chocolate over very low heat, stirring continuously
  9. Spread melted chocolate over bars; return to refrigerator for 30 minutes, until chocolate hardens
  10. Remove from refrigerator, cut into bars and serve
