Time in the morning seems to go a little bit faster than during the rest of the day. No matter how early you get up, there still always seems to be a sprint out the door. And of course we all know how important a proper breakfast is, but who has time?
Muesli to the rescue! Make a big bowl full one night because it lasts for a number of days – and then making breakfast just involves scooping it into your bowl or take away container.
Here’s how: fill a dish (I use a lidded Pyrex casserole dish) half full with rolled oats. Pour in almond or rice milk until the dish is three quarters full. Add your extras of choice. Stir, refrigerate overnight, and enjoy for mornings to come.
Extras that make it even more delicious: cinnamon, chopped apples, shredded coconut, walnut chunks, slivered almonds, ground flax, banana, apple or orange juice (add a touch when you put in your milk), berries, yogurt, honey, vanilla extract.
