Energy bars make a great convenient snack for those afternoons you need a pick-me-up and know dinner is a long way away. They can get you over the mid day hump with ease so that you still have energy for life after work. Regularly relying on store-bought power bars can be problematic, tho: they can contain varying degrees of sugar, and at a few dollars each, the cost can add up! With a little foresight and some elbow grease, you can cut costs and ensure quality ingredients by making your own at home. Make a large batch to be prepared for the week ahead or even the full month (these will store well in the freezer).
Easy Energy Bars:
1/2 cup cashews
8-10 dates
a drop of honey
Combine all in the food processor until desired consistency and then press into chunks. Store in the fridge or freezer. Make them your own by experimenting with other nuts, dried fruit, coconut, sesame seeds, hemp seeds and maybe even a few chocolate chips.
These energy bars are gluten free, vegan, and sure to please. Best of all they have just the right proportions of carbohydrate, protein and healthy fat to balance your blood sugar and keep you energized. Which is why we’ll call them Innergy Bars.
