Not quite sure what to do with your Thanksgiving turkey leftovers? In just a few minutes you can make delicious, healthy and nutritious turkey soup.

Firstly, if you saved your turkey bones, make turkey stock. For tips on making turkey stock, go here. If you don’t have time, buy organic chicken or vegetable stock and use that instead.

Then . . .
In a large pot, saute one onion and 2 cloves garlic in butter for a few minutes. Add ALL of your leftovers that would be suitable to use in turkey soup, such as turkey, mashed potatoes, green beans, carrots, yams, etc. Saute for a few minutes, adding as many herbs and spices as you like: salt, pepper, thyme, sage, etc. Then, add stock. Bring to a boil, then reduce heat and simmer.

You can also transfer the whole thing to a crock pot. Make it in the afternoon and voila! Dinner is ready when you are. Or, make it first thing in the morning before you head out to work. Yes, it’s a little bit of work to prepare (maybe 15-20 minutes at most, MINUS the stock preparation time), but when you come home from work, dinner is ready!

This is also a GREAT time of year to eat soup, in fall, when there is a chill in the air. The warm liquid is easy to digest and will fill you up.
