I love the fall, when the cozy sweaters and scarves get unpacked, the leaves crunch underfoot, and the slightest of chills touches the tip of your nose. But more than anything, I love the fall because it signifies the return of turkey season. Although I do have a tendency for hyperbole, turkey dinner is, in fact, my favorite meal. From the time I moved out of my parents house, I have been hosting turkey dinner at any and every holiday that warrants it, happy to take in all the poor souls who may have to otherwise spend a holiday without turkey. And my love of leftover turkey is so great that each year the bird gets bigger and bigger. So I sit here, in my post turkey haze, contemplating what to do with the turkey explosion that has taken over my fridge. And then I find this website, and it might be my saving grace. Yes, I love my turkey sandwiches, turkey pot pie is a lovely comfort, and turkey soup really does warm the heart, but those can only last so long. Its time to shake it up – we’re talking turkey nachos, turkey tettrazini, turkey chutney salad. And hello turkey pumpkin enchiladas! I’m also thinking turkey quesadillas (with red peppers, green onions, cilantro and cheese), turkey lasagne (with sundried tomatoes, spinach and feta), and turkey chili. Let this be the year that you get creative – we have a few more turkey days to go, so go wild!
